Spicy Buffalo wings with blue cheese dip

Chicken wings are normally deep fried, but here I cook them in a oven at a very high temperature that way they get a crispy skin but stay’s moist inside. To make them you are going to have to dip them in flour, baking powder and salt the night before that way the moister get out but get that crispness that you get in deep fryer.

So what is buffalo sauce ? It’s simple, only two ingredients butter and hot sauce. For this recipe I used frank hot sauce. If you like something hotter, try blazin hot sauce.

Ingredients
  

  • 18-24 mix of wingettes and drumettes
  • 4 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1 tbsp salt
  • 1/3 cup butter
  • 1/2 cup Frank's hot sauce

Blue cheese dip

  • 3/4 cup sour cream
  • 1/2 cup buttermilk
  • 1/2 cup Gorgonzola blue cheese

Instructions
 

  • Dry the chicken with a paper towel. In a small bowl combine flour, baking powder and salt. Dredge the chicken in the dry rub until coated completely. Repeat until all done. Place on a wired rack and put in the fridge over night uncovered.
  • The following day, take the wings out of the fridge. Heat up the oven to 500 ° or the highest temperature. While waiting, in a saucepan melt together the butter and hot sauce and keep warm. For the blue cheese dip mix together all the ingredients in a bowl and then set aside.
  • To cook the wings, light heat up the cast iron pan. Place the wingettes farther from the heat source while the drumettes closer. Cook for 6-8 minutes rotating so that they are evenly cooked. Once cooked use tongs to dip the wings into the hot sauce. Dig in !
