This refreshing cucumber and peach salad is the perfect intro to Summer! You have everything, from sweet juicy peaches to salty prosciutto and a spicy basil dressing. It’s all about contrast, the combination of sweet and salty, acid and heat makes each bite so different and delicious.

Peaches are one of my favourite fruits especially the ones from Niagara. As soon as I heard that peaches were in season, I couldn’t wait to do something with them. The first thing that came to mind was a salad.
This dressing is very simple with only 4 ingredients but lots of flavours. If you do not have lime juice you can use lemon juice instead. In addition, when adding the basil make sure it is finely chopped. You do not want giant leaves in your dressing.
Refreshing Cucumber and peach salad
- 1 cucumber
- 1 peach
- 1/4 cup feta
- 4 slices prosciutto
- 6-8 basil leaves
- 1/3 cup olive oil
- juice of 1 lime
- 1/2 tsp chilli flakes
Spicy basil dressing
- In a small bowl combine chilli flakes, lime juice, olive oil and chopped basil and then set aside.
Cucumber And Peach Salad
- Slice the cucumber 1/2 cm slices. Halve and pit the peach, then cut into thin wedges. Add crumbled feta and torn prosciutto to the bowl.
- Drizzle with dressing and enjoy !
